This meal may not look very appetizing, but it is like a fiesta in my mouth. Yesterday we had lunch at Chipotle and of course that means there are leftovers for lunch today. Yes, I had self-control and did not eat my entire chicken fajita salad in one sitting. Chipotle has many wonderful things, one of which is their Cilantro Lime Rice. I have made this before for a taco bar I put together for some friends and it was 10,000 times better than regular rice or that red colored rice you find at restaurants (how do they make it red anyway?). Next time you make tacos or burritos, spice it up with this fancy rice. Que Bueno!

- 1 cup long grain white rice
- 2 cups water
- 1 teaspoon chicken bouillon granules
- 2 tablespoons fresh lime juice
- 2 tablespoons chopped fresh cilantro
- salt to taste
Bring the rice, water, and chicken bouillon to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, 20 to 25 minutes. Remove from the heat, add the lime juice, cilantro, and salt; fluff with a fork and serve.
